Easy Peach Cobbler


If I had to pick a fav fruit the choice would be easy...peaches!  Peach cobbler has always been a mainstay at our house during peach season.  It was the very first dessert I ever made from scratch some 30+ years ago.  I figured it was high time I shared with you, my recipe for Easy Peach Cobbler.



On our way home from our vacation we picked up some delicious Georgia peaches at a roadside market.

Now I need to be absolutely honest here....when I've made the cobbler before I've always used canned peaches.  But this time I wanted to try my hand at using the fresh ones we had just bought.  For the most part I knew how to stew the peaches but called Mother for a quick reminder.  After peeling  and slicing 5 peaches I placed them in a pot, poured 2/3 cup of Dixie Crystal Sugar on top, added about 3/4 cup water(give or take) and 1 tablespoon of corn starch.

I cooked them on high for about a minute, then turned the heat down and cooked maybe 7 additional minutes on low.  This gives the liquid time to thicken.  Now I like my cobblers a bit on the "soupy" side so I used more water, if you don't like them that way I'd use less.  After cooking, I set the pot off the cook top to cool before pouring the mixture into the dish.

Then I place the cooked peach mixture into the dish sprinkling 1/3 cup of Dixie Crystal Sugar over it. Then add 2 tablespoons of flour, sprinkle 1 teaspoon of cinnamon and 1 stick of melted butter.

Most of the time I use a premade pie crust...I've never made a pie crust from scratch!  But this time I decided to mix it up a bit and used a puffed pastry sheet on top of the peach mixture.  Bake at 350 until the crust is golden.

  2. I LOVE making cobblers! They're so delicious and easy to make with the kids too. By the way-- I have that same baking dish...I use it all the time!!

  3. You know I love me some peach cobbler and this one is calling my name. Love the twist on puff pastry. I will have to try it.
